The entire Food and Beverage Team, Director John O’Shaughnessy, Assistant Director Marielle Arnaud and Chef Evan, are committed to bringing guests the best of the BVI: the freshest fish anywhere in the Caribbean (delivered to us by the fishermen themselves), dishes prepared to bring out the best flavor of the ingredients, all with a dash Caribbean flavor. Recent favorites include:

  • Jerk Lamb Rack accompanied by a Mango Salsa
  • Wild Mushroom Polenta served with Sauce Picante
  • Grilled Filet Mignon cooked to your liking with a Port and Shallot Demi Glaze
