Rolita Harley



If you’re a repeat Bitter End guest, chances are you know Rolita. Rolita Harley is one of the best known and most loved employees at Bitter End.

Originally from St Vincent, Rolita started working at the Bitter End Yacht Club in 1977, as a cocktail waitress. Since then she has been a fixture on the Clubhouse Deck and Hokin Terrace, supplying all guest beverage needs, and going the extra mile. Popcorn with that Pina Colada? No problem— Rolita’s on it. Hot Wings and a Heineken at Happy Hour? You bet!

During her time with Bitter End, Rolita has raised her four children to become top staffers with the BVI government, and in the hotel/hospitality industry.

She is well known to all in and around the community, and everyone loves her. She also continues to be a nanny for many of our Bitter End Yacht Club repeat-guest families. Chances are that she’ll be looking after your kids better than you will in the restaurant or on the deck.

Her friendly smiles and stately stature always catch the eyes of guests and visiting charterers alike. She’s usually the one Bitter End employee returning kids will remember by name, and they love to give her a big hug. — Terrance Linton


Matthew Paul



Have you ever wondered how some people seem to have that natural sparkle, and that no matter what happens everything is “Cool-Cool!” Well I gave up trying to figure it out a couple of years ago, and now I just enjoy it.

Matthew is one of those lucky “people.” Everything in his world is fine, cool, nice, and beautiful. And then, he adds one of his dazzling smiles. Bitter End was lucky enough to add this “chilled-out” individual to the staff about 10 years ago. Matthew (some may remember him from a previous nickname, “Webster”) started working in the evening as a table busser in the restaurant.

He is originally from Grenada, and had always enjoyed music and wanted to play the steel drums. But, his Mum wouldn’t let him. When he moved to the BVI, the Bitter End staff started, and he soon joined; the Reflection Steel Band.

He then started working in the mornings as a waiter so he could play in the band in the evening. This was a move that made everyone happy. Not only do you get Matthew dazzling you during the first half of the day at breakfast and lunch but also on the dance floor in the evening.

As well as being a great waiter and musician, he is also an avid sportsman. He plays cricket, leather ball and table tennis. Until a couple of years ago he was also a very good footballer, but he stretched the tendon in one of his knees and had to give it up. When asked about his injury, Matthew responded “I’m OK…everything’s cool.”

Matthew’s just one of those cool guys. You will know what I mean when you meet him. — Sarah Watts-Dowling


Zelda George
Executive Housekeeper



Towels in the bathrooms, sheets on the beds, laundry pressed. It’s all in a day’s work for Zelda George, a 26 year veteran of the resort hotel business, the last 16 with the Bitter End. Previously, Zelda was Laundry Supervisor at Biras Creek Hotel and Trade-winds, before joining the BEYC team.

Today, she oversees a staff of 32 smiling housekeepers who make sure your room is spic and span. She’s a mother of two, and grandmother to four. Zelda’s staff is discreet, trustworthy, and very friendly. Often times, the only way you know they are around is by the quiet, but lyrical sounds of gospel melodies drifting through the hills. They truly have a “song in their hearts.”

If there’s something Zelda and her team can’t handle, like moving heavy furniture, delivering a TV/VCR to a room, or changing out rugs or fixtures, she calls on Leslie “Bull” Bascombe. Bull (seen center) is the Bitter End’s Head Houseman.



Sarah Watts-Dowling



Food and Beverage Manager Sarah Watts-Dowling oversees one of the most impressive culinary establishments in the Caribbean— two restaurants, three bars, and a snack pub. Did we mention dinner cruises, theme dinners, beach barbecues, and special banquets?


Trevor Nicely



Executive Chef Trevor Nicely stands ready to make sure your every culinary wish is granted.


Terrance Linton



Beverage Manager Terrance Linton shows off an impressive supply of Cuban and Central American Cigars, as well as some tasty after dinner aperitifs and liqueurs.
